Flautas Con Pollo
Ingredients:
Corn Tortillas
Chicken
OIL
Onions
Avacados
Tomatoes
Queso Fresco (Mexican Cheese)
Crema (Mexican Cream)
Lettuce
First you want to boil some boneless skinsless chicken breast and then let cool.
After it has cooled enough for you to be able to shred it up, or just flake it. Then you want to pour some oil in a pot and while you are waiting for it to start to heat (heat on about a 7 or 8) warm up your tortillas in the microwave wrapped in a towl.Heat until you can fold them with out them breaking. Once they are done get your chicken and put it in the center of the tortilla and roll it up and pin it with a toothpick to hold it together. Them put it in the oil. You just want to make it slightly brown or so it is crunchy. when you pull it out let it set on a napkin, to absorb all the excess oil. Then i put all my fluatas in a square cake pan and crumble my queso fresco all over them, and then put them in the oven on broil, just until the cheese is melted and lightly brown. Take them out and chopped up some lettuce and slice up some onions, avacados, and tomatoes. Layer the lettuce first then put down the onions, avacados, and tomatoes and sprinkle some more queso fresco. I cut a small hole in the top of the crema and drizzle that over the top, and if you wish you can put mole sauce on the top for some added flavor. You can buy mole at any store, in the hispanic section. I make mine homemade. I will put that reciepe up later.
You can serve this with beans and rice and a small side of Pico De Gallo.
This makes for a wonderful meal for you friends and family.
